This is a delicious hearty soup and the blend of apple and parsnip goes very well. It is one of our winter favourites and can be enhanced with a tablespoon of ground coriander if you wish. Or you could also add a dash of cream once it is blended if you want it even richer.
INGREDIENTS
25g butter
1 onion, peeled and chopped
1 garlic, peeled and crushed
450g parsnips, peeled and sliced
250g apples (Bramley preferable), peeled, cored and sliced
750ml vegetable stock
salt and pepper
METHOD
- Melt the butter in the pan and add the onion and garlic. Sautee for 3-4 minutes until soft.
- Add the parsnips and apple and cook for a further 3 minutes.
- Add the vegetable stock, season to taste and bring to the boil. Cover and simmer for 25 minutes.
- Remove from the heat and blend in a food processor/with a hand blender.
- Serve, slurp and enjoy!
