I thought I would make a meaty frittata for the husband to break up the chain of vegetarian ones I have been cooking recently. This is a simple dish to make and I used chicken sausages, which are cut up and used in the Frittata. He seemed to enjoy it and liked the combination of the red pepper and chicken.
I used red peppers that I had grilled and then removed the skin. For speed and a time saver, you could use ones from a jar or the deli.
INGREDIENTS
2 red peppers, deseeded, cut into pieces and grilled, skin removed
5 chicken sausages, cut into 5cm pieces
1 onion, peeled and chopped
1 garlic clove, peeled and finely chopped
5 eggs
2 tblspn flat parsley, chopped
1/2 cup Parmesan cheese
salt and pepper
1 tblspn olive oil
METHOD
- Preheat the oven to 180C/350F degrees.
- Add the olive oil to a frying pan and gently cook the sausages until a light brown. Add the onion, red peppers and garlic and cook for 2 minutes.
- Beat the eggs thoroughly, add the parsely and cheese and season to taste. Pour the mixture into the frying pan and cook on a low heat for about 5 minutes until the bottom of the frittata is set.
- Place the frying pan in the oven and cook for about 15 minutes, until the frittata is set and firm.
- Eat and enjoy!
