Beetroot, Halloumi and Green Bean Salad

Delicious salad!

The sweetness of the beetroot goes very well with the salty taste of the Halloumi.   This salad is best eaten as soon as it is ready too, otherwise the cheese will harden..it’s a lot nicer still warm and soft.    If you are having a bbq, you could cook the Halloumi and beetroot over the coals/gas.  Otherwise, this is just as nice under a regular grill. The colours are a great combination too…food should be pretty enough to eat!  Yummy, tell me more Diva…

Halloumi Wrapped in Red Pepper, with Lemon and Chilli

This is a dish that is delicious cooked on the bbq but you could cook it on a griddle pan or in an oven for those of you not blessed with vast months of bbq weather.  To be totally honest, the pictures are not the best representation of the dish, but the taste more than makes up for this.  I will have to redo this one and take better pictures *feigns sigh of protest*.  These are simply little parcels of pepper and cheese yumminess with a nice kick of chilli! Aubergine (Eggplant), Tomato and Parsley Salad

I have been reaching for my simple salad recipes.  This salad is enhanced by the mint and yoghurt dressing which lifts the flavours and goes well with the aubergine (eggplant).  I used a griddle frying pan to cook the aubergine (eggplant) but this would be delicious cooked on the BBQ too!  Failing that, just grill/broil it! Yummy, tell me more Diva…

Tequila and Chilli Chicken

The weather is cooler for us now in the Middle East and the BBQ has been cleaned and ready for business! I adore this time of the year…we now have a few months of lovely weather and BBQ’s ahead of us! Woo hoo!  Initially I cooked this with chopped chillis, but think it would be better if they were blended as a paste so have changed the recipe to reflect this.  And hey, it includes Tequila!  If you don’t partake in alcohol, leave this out.  You could use a dash of orange juice to replace it.   This is a moist and zesty chicken dish which the husband scoffed happily.  It is now on the repeat list of dishes.   This list is growing and he has never looked happier..ha ha!  Yummy, tell me more Diva..

Chargrilled Cauliflower Salad with Tahini and Herb Dressing

Cauliflower, my new favourite vegetable as a low carber and the wonders that you can perform with it.  Not the boiled to sogginess you got as a child (well, in my house…both my grandparents were ghastly cooks and I still feel cheated about that…none of that picture post card yummy granny made cakes for us…the horror stories I could tell…and probably will…).  Tell me more Diva…

Spicy Chicken Kebabs

These are spicy chicken kebabs that must be served with the recommended yoghurt and lemon wedges to really bring all the flavours together and make the spices work.   Like with good marinades this should be marinaded overnight.   Trust me, the longer you marinade, the tastier the dish!  This can be cooked on the bbq or the griddle pan if you are not blessed with the lovely weather we are currently having. Prawn, Zucchini (Courgette) and Lemon Salad

I cooked this for a recent bbq and it soon dissappeared which I took to be a sign of approval.  Mind you, I used large prawns that are usually a crowd pleaser.   As a vegetarian, what do I know..I cannot taste it, I just guess the flavours and hope for the best.  A clean bowl/plate is the best indication that it was well received! Onions stuffed with Cheese

Mmmmm..

Before my low carb days I used to cook a dish on the bbq that was simply boiled new potatoes stuffed with Boursin cheese.  They were gorgeous!  Now that the carby potato is no longer welcome in my lifestyle I have been playing with an alternative and came up with onions.  They hold their shape well and the flavour goes well with a strong cheese.  After all, cheese and onion..a common crisp/chip flavour!  Yummy, tell me more Diva…

Aubergine (Eggplant), Tomato and Sumac Salad

I loved, loved, loved this dish as it ticked all my boxes, looked pretty, easy to make and tasted yummy.   Sumac is a spice used in many Middle Eastern dishes and has a lovely mild lemony flavour.  It is used on Fattoush salad too.  One of my Lebanese colleagues tells me he sprinkles Sumac on his eggs in the morning which I must try as that sounds yummy.   I cooked the aubergine (eggplant) on the bbq but you could cook them on a griddle pan too if you are currently looking at a grey sky full of rain clouds….hee hee.. Gorgeous!

This dish was the surprise hit at our last bbq….it looks fabulous and tastes divine.   We devoured it with relish.  Simple, tasty, pretty and has cheese in it!  What more can you want?  I love Halloumi cooked on the bbq, but for those times of the year when the bbq is out of bounds, the Halloumi could be cooked on a griddle pan. Yummy, tell me more Diva…
