Who needs flour when you have Ricotta!

Low carb pancakes that are just moreish and made out of Ricotta cheese, with added flaxseed to sneak a bit into your diet too!   The cinnamon and nutmeg add to the sweetness but this is something you could play around to flavour it to your own tastes.   Lemon would be nice with some blueberries served on the side.   Just so yummy…low carb has never tasted so good! Tasty Sunday brunch dish!

A perfect Sunday brunch or easy supper dish that can have many variations with added feta cheese and other different herbs and spices.   It is a spiced tomato and egg dish with its origins in north-Africa, but is also highly popular in Israel and Turkey.   Basically, this dish is poached eggs in a tomato gravy with some peppers.  Traditionally this is served with warm crusty bread and a fresh salad but we serve it with our own variation of low carb bread to dip into the rich tomato sauce.  It’s great by itself though. I keep playing with my favourite savoury muffin recipe as I adore them as an alternative to bread rolls with soup and also for a “on the go” breakfast.    I am not hungry when I wake up, but by the time I have suffered the morning commute I am, so they are perfect to munch on then.   This version is fresh with tomato and basil and a dash of Parmesan.  Since this is made out of coconut flour it is very filling and is perfect for keeping you going all morning.   Yummy, tell me more Diva…

This is a delicious low carb alternative to potatoes using the wonderful cauliflower yet again!  I cooked these for breakfast and the only complaint that I got was that there was not enough.  I added cheese to my hash browns but you could alway omit this to keep it Vegan or Dairy Free.   I used Cheddar Cheese, but you could use mozzarella or Parmesan too.  Yummy, tell me more Diva…

This is now my favourite savoury muffin recipe as I just love the cheese and onion flavour combinations and this stops any weakness that I may have for a cheese and onion roll/pastry.  It has the same flavour tastes, with none of that bad, bad pastry.  Even better, is that because this is made out of coconut flour it is very filling and is perfect for keeping you going all morning.   They also make a great side dish to tomato soup..but one is enough to fill you up with a bowl of soup too! I love a savoury muffin for breakfast and find that these made with coconut flour are filling and keep me going until lunchtime.   They are also lovely the next day, split into two and toasted.   Sometimes it can be hard to keep coming up with a variety of healthy breakfast ideas, so make a batch of savoury muffins for a change.  Mind you, these do not have to be for breakfast, you can eat them whenever you want. This is classic recipe from the low carber forums and is a fabulously fast and easy recipe to make.  It is perfect for a quick, healthy and filling breakfast.   It is low carb and gluten free too!    Also a good way to get some flax into your diet.  The muffin tastes like a sweet wholemeal muffin with a dash of cinnamon.   Even the chief taster who is not a flax fan likes this.   You could add chopped nuts or fruit to this and even a few spices to your liking.  Play around and make it your own!
