Tasty Chicken

I found this recipe on Epicurious and was intrigued by the unusual flavour combinations, but from my time in the Middle East, could see how this would work as these flavours are used in this region.  I changed the amount of oil and used a different chicken cut to the original recipe as the Chief Taster is a fussy man.   I grilled the chicken but this would be great on the bbq too.   This is also very easy to do and would make a great quick supper dish when you really can’t be bothered to cook but want something tasty.

When the Chief Taster had finished this dish he confessed that he was not ashamed to admit that he had licked the plate to enjoy the last drops of this sauce.   High praise indeed, although it’s not behaviour I encourage!  The aroma of the spices cooking in this dish are just lovely and warmed the kitchen with their intoxicating smell. Spicy Chicken and Peanut Stew

In Ghana there is a dish called Hkatenkwan which is known as chicken and ground nut stew.  This dish is based on this with a few changes with the method and I do not use palm oil (which is a main ingredient in Ghanian cooking).   The Chief Taster’s family are from Ghana and I am always interested when the family cook to taste the different spices.  (I will be in trouble with the aunts for not using palm oil..eeek!!).    This dish is spicy but also uses peanut butter, which gives a smooth taste.   There is a Ghanian soup which is similar, spicy and also uses peanut butter.  Absolutely delicious!   If you like satay, then you will like this. Spicy, creamy and nutty!  Serve with a side of cauliflower rice or just enjoy a bowl by itself. Yummy, tell me more Diva…

Chicken Baked with Feta Cheese and Peppers

Well, this was a first! In my many, many years of cooking for the Chief Taster I have never received this applause.  And believe me, I have cooked up some amazing dishes (he is so spoilt!).   I baked this for him on a Sunday, and he had this on a Monday (he heated it up).   I received a text excitedly describing the joys of this dish and how he could eat it again.   It must be good……… This is an easy dish to make and I suspect that it is the Feta cheese that brings the dish together.   I also suspect that this is now a regular on our weekly menu at the Chief Taster’s request…..who cares, as it is soooooo easy to make!  Not bad considering I am a veggie..! I think I need to start seeing a professional about my obsession with cooking food in ball shapes…. It’s just easy to make really…throw a few things together, put them in a ball shape and voila!  Something to have with a sauce or by themselves as a snack.  For this creation I was thinking about stuffing ball ingredients and threw them in a bowl, made some ball shapes and voila! Although I used turkey, pork would go with these flavours too.  Yummy, tell me more Diva…

I have tried this recipe with both Turkey breasts and steak slices, both worked out fine.  This just could not be more simple to make and the Chief Taster scoffed them down without inhaling.  Which I took as a good sign.. The most important thing about this recipe is to use that very dry Parmesan which you usually buy in a cardboard container.  Fresh does not work…at all…And hey, it’s a great alternative to breadcrumbs! There is a similar recipe for us vegetarians on my blog but thought I would change it a bit and add some turkey for the husband.  A treat with meat.   Just add some turkey mince to the eggplants, cover with sauce and voila!  The spices add some zing to it! Yummy! Tell me more Diva….

Chicken, Zucchini and Feta Balls

I seem to have a slight obsession with making food into ball shapes at the moment and this is another food ball recipe!  I think it’s probably because we add a couple of my food balls to soup to bulk it out if we are extra hungry.  I have hardly been cooking any meat or fish dishes for the husband so these are very overdue! (I am vegetarian, he is not!). These got the thumbs up from the chief taster and a couple were used as snacks in his daily lunch box.   This is a very easy recipe to make and great if you are in a rush for supper. For this dish, I use my own yellow curry paste, but you could cheat and use one from a jar.  However, I prefer to use my own as it is simple enough to make and keeps the dish free from preservatives or any nasty sneaky chemicals.  This dish is a smooth, yet spicy chicken curry that is easy to make as I bake it in the oven which seems to give a very moist chicken. Chicken and Zucchini (Courgette) Balls

I serve these chicken meat balls on a bed of white cabbage with melted cream cheese and Parmesan for the sauce as an alternative to pasta.  Ribbons of yummy cabbage are our alternative to pasta slathered with a low carb sauce.  Yummy.  The chicken and zucchini balls are “well balanced” to quote the Chief Taster.   Yummy, tell me more Diva…
