Blackened Salmon Fillets

The Chief Taster has been on a few business trips and seems to have this every time so thought I would try it.  I finally have got the blend of spices right (according to him) and am now wondering on what vegetable I could try this on so I can taste it myself (as I am a vegetarian).  I tried eggplant but that was not a success.  The search is on.  Or perhaps I could use this spice mix in a soup….now that’s a thought.  I did try the seasoning in a vegetable stir fry and loved it.  This is very easy to make and takes about 15 minutes to prepare and cook.

A warming combination of flavours that I have used with chicken so thought I would apply them to Salmon too.   The Chief Taster enjoyed this too!   The salmon is smothered with spicy onions and tomatoes and baked.  Simple to make too! Yummy, tell me more Diva…

Fish Baked in a Walnut Crust

The Chief taster tells me that the walnut crust kept the fish moist and loved the flavour as it took him back to the Middle East with the nutty and herb taste.   This is a great way to “jazz up” a piece of white fish and easy to make.   Ground some nuts, throw in some herbs, dip the fish in egg, roll in the nuts, bake and voila!  Simple! This is a tasty, low carb and gluten free way to eat a piece of fish.   Easy to make and a delicious flavour combination of Parmesan Cheese, parsley and lemon!  Refreshing and easy to make!  My favour type of dish! Yummy, tell me more Diva…

Coconut Fried Fish with Spicy Sauce

Coconut covered fish

This was so well recieved by my tasters, that I made extra.  I shall be putting this on the list of regular dishes too, as it was fairly easy to make and a nice twist on “fish and chips” (I served this with a side of baked sweet potato fries).   The sauce is lovely and can be made to have on the side with other dishes, not just this fried fish.   The coconut coating is a nice change from the traditional heavy batter and helped use up my large stock of coconut too! Red Thai Salmon Curry

The strong taste of Salmon goes very well with the red Thai curry flavours.   This dish will tantalize your taste buds with the succulent salmon.   I made my own red curry paste but you could cheat and use a paste from a jar for a quicker dish.   You could also make a large batch of red curry paste and keep it in the fridge too though!  This is a quick, easy and delicious dish to make ! Prawns in a Spicy Coconut Sauce

This is a spicy coconut sauce that is similiar to a thai curry.  The sauce could be used for a chicken dish too, or perhaps a steaming bowl of veggies!  Easy to make too, just blitz in a processor and voila!  And full of coconut…yummy!   I used a packet of fresh peeled prawns for speed.  Back in Dubai it would have been a few of their large prawns the size of your fist from the supermarket! Herb and Almond Crusted Baked Fish

This is an alternative to a breaded crust fish dish, therefore keeping it gluten free, and low in carbs!  The chief taster enjoyed this and declared it light and zesty.  Instead of using lemon, I used a lemon thyme which gave the dish the zesty taste without any of the citrus.  It was easy to make too, my favourite type of dish! Prawn and Vegetable Foo Yung

This is a protein packed Chinese style dish made of vegetables, prawns and omlette.  It is fairly simple to prepare and results in a hearty dish that is large enough for two people to share.  Or one if you are very hungry.   If you halved the quantities below you could cook it in a smaller pan and voila!  A dish for one.   Yummy, tell me more Diva..

White Fish with Lemon and Caper Sauce

As with all the fish and chicken dishes I cannot comment personally, but only convey my husband’s opinion.  This he loved and said he would order it again if he was at an Al A Carte brunch.   Mind you, he was hungry as it was Ramadan in Dubai so he had not eaten all day.   This will be a repeat dish for him.
