Lemon curb is usually packed full of sugar but this version uses my favourite sugar substitute, erythritol so it keeps the carbs low and that sugar demon at bay! I loved the fresh lemon taste of this as you cannot beat the taste of home made with fresh ingredients. Processed foods does not come near. Which also explains the colour as it is not the bright yellow you get from the sugary, processed, full of E-flavourings you buy from the supermarket. Keep it natural peeps! 11 SepThis is a nice vegan version of pesto that uses Kale. Kale is one of the nourishing of all greens and the calcium in Kale is more absorbable than the calcium in milk. Full of vitamin A and C it is a must in your diet! You can use this as dip, dressing or smother it over meat or veggies. The lemon tang combines well with the kale and gives it a taste of summer. A Thai curry paste is easy to make as long as you have a blender or food processor. Just throw the ingredients and blitz..and voila! You can keep this in a Tupperware box in the fridge for use too (it should keep for about a week or so). As with everything made yourself, you know what ingredients are in it and there are no preservatives or nasty chemical surprises in it! Nothing wrong with home cooking at all, no sireee! 29 NovI confess that I used to love the “TGIFridays” dip that I used to get in the frozen section of the supermarket. So I reworked this as a fresh version..homemade is always much nicer. Alfredo Sauce
29 NovThis is a gorgeous, decadent, smooth, creamy, divalicous sauce that is lovely over veggies and chicken. Simple to make too. I love this over broccoli or cauliflower as a quick supper dish. Or over shredded courgettes (zucchini) in ribbons to pretend it is a pasta dish. Just as filling but without the carbs! Chestnut Puree
27 NovI am finding it difficult to find cans of chesnut puree in Dubai so decided to have a crack at making my own since I found fresh chestnuts for sale in a supermarket and they were quite cheap. The results were suprising and I don’t think I will spend that money on a tin of puree again! Roasted Red Pepper Dip

This was described as “morish” by the husband as he tucked into a bowl of this last night. Red peppers are full of colour and have a sweet taste. I love the flavour that they give when roasted too. Here they are used to make a creamy dip that can be enjoyed with crudites, cheese crisps and grain free crackers. Tell me more Diva..
