I love the flavours of these fritters as the lemon lifts the saltiness of the feta and goes well with the broccoli. They can be great as a side dish, but sometimes I have these as a main with a salad. This is also a good way to sneak some green veggies into your family’s diet. I am always up for sneaking healthy food into dishes. The Chief Taster is often stirring food suspiciously with a fork and asking me “have you put X in this!”.
You could always make these ahead and let sit in the fridge before frying.

I love coleslaw and most weeks make a batch of it to go with my lunchtime frittata. This makes a nice change by spicing it up with lime and coriander (cilantro). You could also add some hot sauce to this too. Or perhaps chop up a few mild chilli peppers too. Coleslaw is a great way to get some raw veggies in you too!As for the mayonnaise, it goes without saying that I use homemade and none of that white rubbish in a jar! It is very easy to make and far tastier! A batch of home made mayonnaise lasts about a week in the fridge, in a sealed jar/tupperwear pot.

Delicious pumpkin and broccoli
I initially made this as a main dish but I think this would be lovely as a side dish too. Once we finished our bowls we both said we wanted more. The saltiness of the feta combined with the sweetness of the pumpkin with the uplift of the chilli was just devine. And roasted broccoli! That was a revelation and a lovely surprise. The dish looked pretty and good enough to eat, and we did it justice! Yummy, tell me more Diva…
I am an avid lover of Lebanese food and this is one of many dishes I had in Beirut. Lebanon is an amazing country and I urge everyone to visit..it has a beautiful coastline, ancient ruins to visit, an amazing history, great skiing during winter in the mountains, warm, welcoming people and the freshest, tasty food! And no-one parties like the Lebanese! This is also a great use of broad beans which I also adore. To me they are the bean of summer and take me back to my childhood, popping beans with my grandmother. Broad beans are also know as Fava beans. A simple dish which can be eaten warm or cold. Nice with a glass of Chianti…ha ha (Silence of the Lambs subtle reference…*groans and apologises*..) Yummy! Tell me more Diva…
Nutty covered brussels
Brussel sprouts to me are normally something that is served to me during the festive season, and usually either boiled to an inch of it’s life or hard enough to chip a tooth. This is a nicer way of eating them and is a great side dish. Want to trick your family and friends into eating brussel sprouts…then serve this! It’s creamy, full of flavour and far nicer than a plain serving of sprouts! Yummy, tell me more Diva…
Delicious, buttery cauliflower
Just when I think I have done everything I can with a cauliflower, then another recipe pops up! If you are a fan of mustard, then this dish is simply devine and the tang of the lemon is lovely. I had to stop myself eating the whole dish once I tested a piece after it was cooked. I almost fell upon it as if it were a chocolate mousse cake. Absolutely gorgeous! This sauce would also be good to pour over chicken, or perhaps a strong fish? Or perhaps beef? This is a wonderful side dish that could steal the show from the main course! Yummy, tell me more Diva…
Nutty and tasty!
How many times can I enthuse about the versatility of the humble cauliflower..many more times it seems! This is a dish that could be used at room temperature as a salad or warm as a side dish. Yummy veggies in cauliflower rice
I was trying to make an alternative to a vegetarian version of Paella but decided just to call this vegetable rice. I am enjoying using cauliflower as an alternative to rice…the joy of cauliflower yet again! You could throw some cooked chicken or some prawns in this but my version just has veggies. Fake coconut rice made with cauliflower!
I am having a love affair with cauliflower at the moment and playing around with various versions of traditional rice dishes but with the glorious cauliflower. I wanted a coconut “sticky” rice and this came fairly near to it. Say goodbye carbs, and hello healthy alternative! It is great with curries and spicy dishes too! Baked cabbage..it’s tasty..trust me!!
Many years ago, I used to make this dish but used peanuts and a not so friendly cheese sauce. So I have revived this with toasted cashews and took away the choux cheese sauce and replaced it with a more carb friendly one. We both love cabbage and to pour a cheese sauce over it is just devine to us. Add some nuts for a little extra taste and voila! Yummy, tell me more Diva…
