I was trying to make an alternative to a vegetarian version of Paella but decided just to call this vegetable rice. I am enjoying using cauliflower as an alternative to rice…the joy of cauliflower yet again! You could throw some cooked chicken or some prawns in this but my version just has veggies. The essential ingredient is the flavourings really, add those and any veggies will do! Yummy, tell me more Diva…
Coconut Cauliflower Rice
24 JanI am having a love affair with cauliflower at the moment and playing around with various versions of traditional rice dishes but with the glorious cauliflower. I wanted a coconut “sticky” rice and this came fairly near to it. Say goodbye carbs, and hello healthy alternative! It is great with curries and spicy dishes too! Although I had some with my lunch frittata and loved it..! Yummy, tell me more Diva…
Cabbage, Cashew and Cheese Bake
28 DecMany years ago, I used to make this dish but used peanuts and a not so friendly cheese sauce. So I have revived this with toasted cashews and took away the choux cheese sauce and replaced it with a more carb friendly one. We both love cabbage and to pour a cheese sauce over it is just devine to us. Add some nuts for a little extra taste and voila! Yummy, tell me more Diva…
Garlic and Pesto “Dough” Balls (Gluten Free and Low Carb)
22 DecI used to love garlic dough balls so had a play around with a low carb breadstick recipe and voila, low carb and gluten free alternative to dough balls. Slathered with some garlic butter and yum! Yummy, tell me more Diva…
Halloumi Wrapped in Red Pepper, with Lemon and Chilli
6 DecThis is a dish that is delicious cooked on the bbq but you could cook it on a griddle pan or in an oven for those of you not blessed with vast months of bbq weather. To be totally honest, the pictures are not the best representation of the dish, but the taste more than makes up for this. I will have to redo this one and take better pictures *feigns sigh of protest*. These are simply little parcels of pepper and cheese yumminess with a nice kick of chilli! Yummy, tell me more Diva…
Cauliflower Hash Browns
19 JulThis is a delicious low carb alternative to potatoes using the wonderful cauliflower yet again! I cooked these for breakfast and the only complaint that I got was that there was not enough. I added cheese to my hash browns but you could alway omit this to keep it Vegan or Dairy Free. I used Cheddar Cheese, but you could use mozzarella or Parmesan too. Yummy, tell me more Diva…
Spicy Cauliflower with Tomatoes
23 MayA yummy, spicy side vegetable dish that celebrates the joy that is cauliflower! It is lovely and spicy and makes a great side dish to any meal full of spice. I sometimes “up” the cauliflower content of my plate and serve this with stir fried cauliflower rice..because you cannot have enough cauliflower! Yummy, tell me more Diva…
Spicy Sweet Potato Fries
21 MayThis is a yummy side dish (or you could eat a bowl of this dipped in sour cream!). I like to add spice against the sweetness of the potato. And they are bright and colourful on your plate! Yummy, tell me more Diva…
Broccoli and Cauliflower Fritters
19 AprThese is a great way to sneak vegetables into you and your loved one’s diet…mash it up, fry it, call it a fritter and watch them munch them happily. I use sage as the main flavouring but you could change this with your favourite spice or herb. Yummy, tell me more Diva…
Green Bean Casserole
14 MarThe traditional green bean casserole seems to be made with a tin of mushroom soup, but not in my house. No tins of soup in my cupboards…heaven forbid! So I thought I would have a play with this dish without the soup and keep it low carb, gluten free and tasty. The result was a heavenly dish which I could easily eat by itself rather than a side dish! I will warn you…this is moreish, and you will wonder how on earth you managed to eat a whole dish of green beans to yourself…or perhaps that was just me!! Yummy, tell me more Diva…
