Crustless Pumpkin and Mascarpone Pie

A crustless pie could also be called a baked custard but I am going to be fast and loose with the definition of pie!   You could use this as a filling for a gluten free pie with a crust too if you wished.  The Mascarpone adds a richness and smoothness to the dish. It’s easy to make and is just delicious warm, with a side of cream.  There is just something about the combination of pumpkin and the warm spices that I adore.  Yummy, tell me more Diva…

This is a Brazilian dessert that I came across in an effort to use up all the egg yolks I have left over after making healthy bread (which uses egg whites).   There is a limit to how much mayonnaise we can eat, so I looked for another way to use egg yolks and voila!   I replaced the sugar in the traditional recipe with erythritol.  You could used your sweetner of choice instead.   It only has three ingredients and looks wonderful when cooked.  It looks like you slaved away in the kitchen for ages too! Strawberry and Coconut Chia Pudding

I normally use almond milk in my Chia puddings, but this time tried coconut milk.   It was lovely and creamy.  A great version of strawberries and cream for breakfast!  Or a dessert.  I often have chia puddings for breakfast but this can make a lovely dessert option too.  Chia seeds are gluten and grain free but one tablespoon of the little seeds has more calcium than a glass of milk.  More Omega 3 than salmon and more antioxidants than blueberries!  They give you energy and are also great for weight loss as they absorb about 12  times their size in liquid.  So will expand and keep you full as well as being nutritious.  They also keep your blood sugar levels at a sensible level.   They are one of the most versatile superfoods. Almond and Raspberry Crumble Cake

If you enjoy almond slices, you will enjoy this as it tastes very similar.  This is a great recipe from Linda’s Low Carb.  I love her site and it has many great low carb recipes.  The cake itself, is very moist, and best kept in the refrigerator.    I used chia seed jam for this but you could used any other low carb/low sugar jam instead.  Yummy, tell me more Diva…

Creamy and light deliciousness

This delicious and creamy dessert  is quick and easy to make.  It’s a great alternative to pumpkin pie as a dessert and can be made in under 15 minutes.  It tastes like a light pumpkin cheesecake filling and is nice served with chocolate chips and whipped cream.  You could even serve the mouse in layers in between whipped cream..yum! I love the flavour combination of raspberries and coconut so thought it’s time I put it in cheesecake form.   Rather than have a big solid cheesecake, I baked mini ones in a muffin pan.  Great for a packed lunch or a good way to ration the cheesecake rather than cutting a slice that is larger than your hand span!  Okay, that’s probably just me and the Chief Taster… Yummy, tell me more Diva…!

This is made with ground hazelnuts instead of flour (the same way I would normally use almond flour really) but the hazelnuts just combine so well with the dark chocolate.  It’s a rich, tasty dessert that is moist and chocolatey, yet light.    I found it very moreish, and I beg you to try it whilst it is still warm!  I used chocolate with 70% cocoa solids but you could take it down a few levels if you wanted. Pumpkin Muffins with Cream Cheese Filling (Almond Flour)

Just as I was about to spoon the muffin mixture into the tin, I was thinking about the cream cheese frosting and thought, why not put the topping inside the muffin?  So whipped up some cream cheese, and voila!  Luckily for me it worked out, despite my fear of the filling oozing out during baking.   Cream cheese seems to go so well with a spicy pumpkin muffin..it’s almost a classic flavour combination.   I tried to keep the sweetness down as I find pumpkin sweet enough, and the cream cheese filling adds to this.  However, if you prefer a sweeter muffin, double up the erthyritol.    Yummy, tell me more Diva…

Who needs the Cheesecake Factory when you have a few packets of desiccated coconut and cream cheese in the house!   This is a blend of my coconut cups and my current favourite cheesecake recipe.   Instead of using nuts for the base, I have used desiccated coconut to create a crust.  Then filled it with creamy cheesecake mixture and baked it.   Then ate large pieces of it under the guise of “research” whilst trying to hold back the Chief Taster with one arm.   Yummy, tell me more Diva…

Lemon and Blueberry Chia Pudding

Although this pudding was not as thick as the others I have made this week, I still loved the slightly wet texture with the zest of the lemon against the plump sweetness of the blueberries.   Very uplifting and a lovely start to the day. If you wanted it thicker, add another tablespoon of Chia seeds.   Yummy, tell me more Diva…
