I love the flavour combination of rose and pistachio and I love a good coconut flour muffin.  So I combined them all for a lovely light but flavour-some muffin.    Makes a nice taste change too.   This is my favourite coconut flour muffin/cake recipe.  It’s easy to make and is a light, fluffy cake.  Who needs that nasty wheat stuff when you have coconut flour?!! Lemon Curd Butterfly Cakes (Almond Flour)

I have been enjoying a big jar of home made lemon curd recently slathered over anything I could eat, so decided to add it to my favourite almond flour cupcake recipe.   I made them into butterfly cakes as the “wings” seemed to fit just right over the lemon curd filling and more importantly, I thought that they looked cute!  To me, butterfly cakes were something that takes me back to my childhood as we used to bake this on a Sunday afternoon.   This is a lovely fresh cupcake that is full of the zing of spring! Rosewater has a lovely intense fragrance and makes these cupcakes feel as if they should be served at a summer’s tea party.    The rosewater has a strong flavour, so don’t go too crazy.   Rosewater is a flavour associated with the Middle East but also Great Britain.   Don’t get the British started on their roses or their lawns.   You may be there a while….    Yummy, tell me more Diva…

Romance your loved one with a cupcake or two!   Or if you are single, make a batch, settle down with a good film and scoff the lot!  This is my favourite almond flour cupcake recipe as it yields a light, fluffy cupcake that is low in carbs and no sugar but all taste!  The chief taster loved these and my experimental batch disappeared within 24 hours.   I used to love making butterfly cakes as a girl so had a play around with these and make butterfly wings as well as the hearts for the cup cakes.   Yummy, tell me more Diva…

Delicious and no cream!

I love this alternative to chocolate mousse as it is creamy and gorgeous!  It has no cream or eggs in either but you would never guess.  I challenged the chief taster to tell me what was in it and got the reply banana.  He was so wrong…it’s actually avocado!  A healthy alternative to chocolate mousse!   Another added bonus is that it is soooo easy to make!  Throw in a blender and voila! Berry Crumble with Coconut and Almond Flour

The fruit crumble is a husband favourite and one of the first desserts that I baked for him.  So it was time to rework this favourite dish into something that fits into our new lifestyle…this was easy..make the fruit berries, and the topping a mix of coconut flour and ground almonds…voila!  Crumble that is allowed on the new regime! To be honest I am not sure if this is a cake or could be passed off as a soft cookie. They are soft and sponge-like but I wonder if I cooked them for longer to harden they would be more of a cookie. For the time being I am using them as mini sponges and sandwiching them with some cream and soft fruit. The ones that I used with cooked slices of apple did not last long at all. Coconut and Chocolate Tartlets

Since I have a surplus of dessicated coconut and there are only so many macaroons you can make, so I tried these tartlets to use up the surplus.  The coconut is used to make the tart cases and holds up very well.  The chocolate filling is delicious and I did make one version with a large dash of rum (naughty but nice). Lemon and Lime Ricotta Pie

This is a delicious way to cook with Ricotta and gives you an lovely crustless “pie”.  Low carb delight for dessert!  It is a lovely change to a cheesecake and I like to serve it with berries on the top.  Mainly because I love the flavour combination of zesty citrus with berries.  Yum!
