I keep playing with my favourite savoury muffin recipe as I adore them as an alternative to bread rolls with soup and also for a “on the go” breakfast.    I am not hungry when I wake up, but by the time I have suffered the morning commute I am, so they are perfect to munch on then.   This version is fresh with tomato and basil and a dash of Parmesan.  Since this is made out of coconut flour it is very filling and is perfect for keeping you going all morning.   Yummy, tell me more Diva…

Many years ago, I used to make this dish but used peanuts and a not so friendly cheese sauce. So I have revived this with toasted cashews and took away the choux cheese sauce and replaced it with a more carb friendly one. We both love cabbage and to pour a cheese sauce over it is just devine to us. Add some nuts for a little extra taste and voila!  Yummy, tell me more Diva…

I have tried this recipe with both Turkey breasts and steak slices, both worked out fine.  This just could not be more simple to make and the Chief Taster scoffed them down without inhaling.  Which I took as a good sign.. The most important thing about this recipe is to use that very dry Parmesan which you usually buy in a cardboard container.  Fresh does not work…at all…And hey, it’s a great alternative to breadcrumbs! Chicken Florentine Stuffed Peppers

The Chief Taster called this a hearty main course but that’s probably because I gave him two large stuffed peppers rather than one with a side salad or vegetables.   He ate them all though.   It’s an easy dish to make and full of flavour.   It calls for cooked chicken and I used steamed cooked chicken as I find steaming the chicken keeps it moist (says the vegetarian!).   You can serve this with a side salad, cauliflower rice, veggies or a nice tomato sauce.  Or just eat it on its own. Chicken Parmesan

This is simply your basic Chicken Parmesan recipe replacing the breadcrumbs with almond flour and it still works for a tasty chicken main dish.  I like to marinade the chicken overnight to allow the flavours to fully take, but you could always shorten it down for 4 hours.  The main chicken taster (aka the husband) loved this and it will be a repeat dish. Low carb and gluten free breadsticks..These are version 3 with Mozzarella...

Yes, bread sticks!  Delicious with Marinara sauce or simply by themselves…and even better..low carb and gluten free! Woohoo!  Who said being healthy has to be boring or you have to give up your favourite foods?  If eating this good is wrong, I don’t want to be right…A great thing about this mixture is that it will keep in the refrigerator, ready for you to cook up a fresh batch as when needed.  Keep it covered or in an airtight container though.
