This is a different way to use asparagus and make a change from steaming/grilling/roasting it! It’s a nice light summery fritter and could be nice as a starter or fabulous with a salad. It does seem a bit strange grating the asparagus but it works as well as courgette (zucchini) in a fritter! I used just dill for the herb flavour but you could play around with this…mint might be interesting..
As ever, I use coconut flour as the binding agent as for me, it soaks up the moisture and I always have a bag of it in my cupboard. Other flours would work as well.
INGREDIENTS
1 bunch asparagus, cleaned and stalk removed
1/3 cup fresh dill, finely chopped
2 spring onions, finely chopped
1/2 feta, crumbled
1 egg, beaten
1/3 cup coconut flour
salt and pepper
2 tblspns coconut oil (or other oil to fry)
METHOD
- Grate the asparagus
- Add the remaining ingredients (except the oil) and season to taste
- Mold into patties.
- Heat the oil in a pan.
- Gently fry the patties until golden on each side.
- Eat and enjoy!
