A fab way to start the day with a low carb and Gluten Free pancake.   I love the versaltity of cream cheese and enjoyed making a pancake out of it!  For the sugar element of the recipe I used coconut sugar but you could use any other sugar substitute.  Yummy, tell me more Diva…

Whilst shopping for my coconut flour I came across a packet of coconut nectar and was full of excitement to find another natural substitute for sugar.    Coconut nectar is a great sugar replacement that has no additives or preservatives and comes from my favourite thing, the joyous coconut!   Coconut Nectar is an all natural raw sweetner from the blossoms of the coconut tree.

You can use this instead of sugar in your coffee or tea, and even bake with it. It is Gluten Free and a naturally low Glycemic food.  Coconut sugar comes from the sap of coconut trees  and contains anti-toxins, essential minerals, iron, vitamins, nicotinic acid, thiamine and many more vital nutrients.

So, off I skipped to the kitchen to try out my new found sugar replacement and did some baking…the results were delicious!  Surely eating such delicious food should be bad for you!

I am sure that this is not readily available apart from your health shops so you may have to purchase this online.
